This module is a core veterinary module within the undergraduate programme in veterinary medicine. Students will build on existing knowledge gained from previous modules, including Veterinary Public Health I (VET30060) so that they have competencies in developing and applying risk management approaches to control relevant hazards at the pre-harvest, harvest and post-harvest phases of the food chain. This will include:
- developing an understanding of the responsibilities of the Official Veterinarian (OV) in abattoirs & food processing plants
- having day one competencies in meat inspection (both ante-mortem & post-mortem) following theoretical and practical training for the main food animal species
- developing an awareness of the responsibilities of all stakeholders relating to animal welfare of animals on farm, during transportation and in the abattoir
- having an understanding of the concept of longitudinally integrated safety assurance & Hazard Analysis Critical Control Point principles and the development of food safety management systems
- having a knowledge of relevant legislation and regulatory controls that are applied within the food chain to monitor and manage associated hazards
- introduction to food processing technologies used for foods of animal origin
- having an understanding of the application of molecular diagnostic tools for the detection and characterisation of zoonotic pathogens

About this Module

Learning Outcomes:

At the end of this module students will have:
- day one competencies in the areas of ante-mortem and post-mortem examination of food animals and food hygiene & processing technology.
- knowledge of the responsibilities of all stakeholders, including the OV, relating to animal welfare of animals on farm, during transportation and in the abattoir
- an understanding of the concept of longitudinally integrated safety assurance & Hazard Analysis Critical Control Point principles and the development/implementation of food safety management systems
- day one competency of relevant legislation and regulatory controls that are applied within the food chain to monitor and manage associated hazards
- knowledge of food processing technologies used for foods of animal origin
- understanding of how molecular methods can be applied to assist epidemiological tracking of zoonotic agents within specific food chains.
- day one competency in VPH problem solving in the context of veterinary professionals working as practice clinicians or VPH specialists.

Approaches to Teaching and Learning:
This module will be delivered through a combination of lectures, tutorials/small group teaching around meat inspection and case studies and field trips (depending on COVID restrictions). Students will also be given the opportunity to research and write up an individual Case Study with an emphasis on knowledge of subject matter; appropriate use of supporting evidence; evidence of logical thinking; clarity of expression; presentation

Learning Requirements:

The students will be rquired to have completed previous core modules, and in particular be able to demonstrate competencies in Veterinary Public Health I, veterinary anatomy, veterinary microbiology, immunology, parasitology and pathology along with clinical pharmacology and therapeutics
