At the end of this module students will have:
- day one competencies in the areas of ante-mortem and post-mortem examination of food animals and food hygiene & processing technology.
- knowledge of the responsibilities of all stakeholders, including the OV, relating to animal welfare of animals on farm, during transportation and in the abattoir
- an understanding of the concept of longitudinally integrated safety assurance & Hazard Analysis Critical Control Point principles and the development/implementation of food safety management systems
- day one competency of relevant legislation and regulatory controls that are applied within the food chain to monitor and manage associated hazards
- knowledge of food processing technologies used for foods of animal origin
- understanding of how molecular methods can be applied to assist epidemiological tracking of zoonotic agents within specific food chains.
- day one competency in VPH problem solving in the context of veterinary professionals working as practice clinicians or VPH specialists.

The students will be rquired to have completed previous core modules, and in particular be able to demonstrate competencies in Veterinary Public Health I, veterinary anatomy, veterinary microbiology, immunology, parasitology and pathology along with clinical pharmacology and therapeutics
