PHPS40690 Public Health Nutrition - Food Science

This module will give you a basic understanding of the concepts of nutritional epidemiology, the methods employed to analyse the relationship between diet and nutrition status, focusing on specific nutrient deficiencies, dietary patterns, and growing chronic disease. The role of nutrition at each stage of the lifecycle will be examined while considering approaches to promote health and prevent adverse health outcomes. The effect of policy on dietary intake is also considered and its impact on over and undernutrition in both developing and developed countries. Psycho-social and cultural factors influencing dietary intake are explored throughout the module particularly in the context of developing strategies for improving nutrition at the population level.

Learning Outcomes:

By the end of this modules students should be able to:
Understand the core concepts in nutritional epidemiology and be familiar with current diet-disease trends.
Demonstrate the ability to critically analyse current findings from nutritional epidemiological studies on the determinants of diet-related disease.
Apply public health frameworks to evaluate and improve nutritional status of populations as part of the Public Health Nutrition Cycle.
Critically identify the evidence for interventions and policies which address modifiable factors associated with diet across multiple levels of influence.
Create coherent proposal outlines for solutions to key public health nutrition challenges.
