FDSC2026K Plant Products - Raw materials and commodities

Academic Year 2023/2024

This module will give students a foundation knowledge of plant-based food commodities, including cereals, legumes, fruit and vegetables. The module will cover basic information about their quality, how these are produced, stored and processed to extend their shelf life. The technologies behind the transformation of food commodities into a range of food products will also be explored.

Learning Outcomes:

On completion of this module students should be able to:

1) explain the principles behind the production of plant-based food commodities
2) examine the principles of processing these commodities into a range of foods
3) apply knowledge to select the most important quality criteria in the production of food commodities
4) compare and contrast different food commodities and their food applications
