In this module you will study advanced principles relating to the integrity and safety of the total food chain. Topics covered include safe food processing, quality systems standards, HACCP, traceability and risk analysis. Material will be covered through a mixture of coursework and directed learning.

About this Module

Learning Outcomes:

On completion of this module, students should have good conceptual knowledge on the principles underpinning food chain integrity and safety. Students should be able to apply the knowledge and understanding gained on how to produce safe food and the control systems required to ensure food safety.
